For many MMORPGs, NPCs are just throw away characters there to give you a quest and send you on about your business. The NPCs in these MMOs however go above and beyond what you expect from the usual interactions.
Flirt with them, take them on dates, marry them. That's just some of the NPC interactions you can have in Star Wars: The Old Republic. Whether it's a companion by your side at all times or a random quest giver, there are numerous options in how you can interact with NPCs in SWTOR and numerous ways they can respond.
Story is king in Final Fantasy XIV, and along the way, you will meet many NPCs that will leave a lasting impression on you. NPCs can be around for entire story arcs in XIV, presenting themselves as much more than random quest givers. Moreso, you'll be part of the story with the main NPCs, not a side character in their journey.
I absolutely love the way you interact with NPCs in The Elder Scrolls Online and the fact that they are all voice-acted. Each NPC helps engage the player with their story, giving good reasons for why you want to complete the task they are giving you. Other NPCs will appear off and on throughout your ESO adventures, and you can feel like you really get to know them and that they are part of the living, breathing world.
Some of the main NPCs in Guild Wars 2 have been alongside us on our journey for years. Those characters become part of the team and, for some, more like family. Events like Marjory and Kasmeer's wedding feel like real happenings because you've been invested in their story for so long, and they've been a major part of yours.
Few NPCs in MMOs can match those of Secret World Legends when it comes to world-building. The game provides an awesome, creepy, "every myth and legend is real" aesthetic that the NPCs cultivate by the way the story is delivered to players through them. Say what you will about the combat (both versions of the game were bad), but the setting in Secret World Legends is fantastic and the NPCs help create that atmosphere.
